And you can tell. His cuisine, pure, simple and creative focuses on freshness and quality. He thinks color, flavor, texture, and the cosy décor reflects it with exposed stone walls and  comfortable contemporary furniture.</p>
<p>After 7 years at the head of the classical restaurant Bamboche in posh and classical 7th arrondissement, he recently opened under his own name in trendy and open-minded Marais. In the plate, unusual vegetables and extra-fresh products (there is no cold room in the kitchens) are at the core of the « Carte Blanche » menu, where you are invited to trust the chef’s brilliant inspiration of the day.</p>
<p>He likes to assemblate, not to blend, to respect the flavor of each ingrédient. Signature dishes, like the delicious oyster sorbet or the crélice of duck foie gras, remain on an otherwise ever-changing menu.</p>
<p>Wines are different, young and surprising, selected by Chantal Colliot, the chef’s wife – Claude Colliot definitely is a creative pick.</p>
<p>Open for lunch and dinner, from Tuesday to Saturday.</p>
